Quick & Easy Setup Guide: Go to the game's "Properties" on Steam. Go to "Betas" (or "Game Versions & Betas"), select the "oculus" branch, and update the game. The game's name should now be "Euro Truck Simulator 2 [oculus]". Go to "Properties" again, and in the launch options, type EXACTLY: -openxr . Done! Enjoy your ETS2 VR!
